Currency lives on your profile, not on an individual collection — go to Profile → Settings → Currency and pick one. It changes the currency your prices are shown in, everywhere you look.
Switching converts your prices — it does not relabel them
This is the part worth reading twice. Nothing stored on your bottles is rewritten. Every purchase price keeps the currency it was entered in and every custom market value keeps its own, and we convert them for display each time you look. So a bottle you bought for 100 US dollars does not become 100 euros when you switch to euros — it becomes whatever 100 US dollars is worth in euros, and the bottle still holds 100 USD underneath.

Expect every total to change the moment you switch, then. That is the conversion doing its job, not your data being altered.
Which exchange rate we use
A purchase price is converted at the rate on that bottle's purchase date, because that is what the bottle cost you at the time. Market values convert at the current rate. So switching currency will not make what you spent drift around with today's exchange market, but your collection's market value does move with it.
It follows you, not the collection
Because the setting sits on your profile, it applies to every collection you can open — your own and any shared with you. It is also personal: a collaborator who prefers pounds sees the same collection in pounds, and neither of you changes anything for the other.
On iPhone & iPad
Tap Profile, then the settings gear at the top right.
Under Profile, tap Currency.
Search for or tap the currency you want. It saves on its own and confirms with Currency updated.
On Android
The same path: Profile → settings → Currency under the profile section.
On the web app
Click your profile at the top right, then Settings.
Under Preferences, open the Currency list and choose one.
Profile → Settings → Currency
Prices you enter from then on default to your new currency, and you can still override that per bottle or per market value at the moment you type it.
